Hi there! My name is Anna Kate and I’m so glad you’re here. I grew up in small-town Alabama over an hour away from great grocery stores, so I know what it’s like to find a new recipe, only to realize it’s going to take some creative substitutions or a two-hour round trip grocery run to be able to make it. The most exotic items stocked in our hometown grocery stores were low-sodium soy sauce and taco kits. Then, 7 years ago, I moved to Nicaragua along with my prized Kitchenaid stand mixer and a cast-iron skillet. There, my options were even more limited. No lemons for 6 years! I now live in Costa Rica with my husband (we just got married in January!) with just about any ingredient readily available. After years of feeling limited in the kitchen because of what was available to me in the grocery stores, I’ve learned that delicious food doesn’t have to be complicated. Of course, I’ve made my fair share of 20-step recipes, but when it comes to the food I’m cooking and sharing every day, I need it to be simple, easy, not get a million pots and pans dirty, and mostly…..so delicious that it’s worth making again.
